Hummus Chicken and Veggies

This recipe is so, so, so good and it will make your house smell delicious as it is baking.  I found it at Gimme Some Oven.  This one is a definite keeper for my family.


You will need:
4 skinless, boneless chicken breasts
1 cup hummus (I used roasted red pepper)
salt and pepper
1 yellow squash
1 zucchini
1 sweet onion
1 Tbsp. olive oil
1 lemon
Smoked paprika

Directions:
Preheat oven to 450.  Spray and set aside a large baking dish.

Chop, yellow squash, zucchini, and sweet onion.  In a mixing bowl toss veggies, olive oil, and salt and pepper.  

Season the chicken breasts with salt and pepper.

Arrange veggie mixture in the bottom of the baking dish in one layer.  Place chicken breasts on top of veggies.  Cover the top of the chicken breasts with the hummus, covering the entire breast.  Squeeze the lemon juice over the entire mixture.  Then dust veggies and chicken with the paprika.

Bake for about 30 minutes.  I served ours with Trader Joe's mushroom risotto.

Aztec Inspired Crafts

I don't know about you, but I have been loving the Aztec trend.  I have searched and found some Aztec craft inspiration ideas for you!




These paper feathers would make adorable gift tags or book marks.




This is a stamp I made reusing a Styrofoam leftover lid.  I used the end of a paint brush to create my pattern, then I used a foam paint brush to apply the paint.


I also made this Aztec inspired embroidery hoop.  I really love the color combination on this one.
