Buffalo Chicken Quesadillas

At the height of summer, is there anything better than grilling out and relaxing outside?  This is a great recipe to do just that!

Buffalo Chicken Quesadillas

You will need:
1 lb. chicken tenders
1 cup buffalo wing sauce, divided
2 cups shredded Monteray jack cheese
1/4 c. blue cheese crumbles
2 large tortillas

Marinate chicken tenders and 1/2 cup buffalo wing sauce.  Let sit for at least an hour in the refrigerator. 

Crank up the grill and grill chicken tenders until they are cooked through.  Remove chicken from the grill.

Slice up the chicken and toss with the remaining buffalo wing sauce. 

Layer your tortillas with chicken, Monteray jack cheese and blue cheese crumbles. 

Flatten the tortillas and toss them back on the grill until the cheese melts and the tortillas are crunchy.

Now you can remove it from the grill, slice, and eat!

  1. OH yummy! I absolutely love anything with the word "buffalo"!!! I could eat buffalo sauce on cupcakes! Love the quesadillas!
